Oysters—a celebration of the season

Oysters and spring—summer festivities go hand in hand, and we always recommend the Sydney Rock variety.


Endemic to the New South Wales and south Queensland coastlines, they can be found across countless estuaries, so no matter where you happen to be holidaying over the coming months—whether that’s here in Bondi or a little further afield—you're sure to find these pristine gifts of nature.


Known for their rich, soft and creamy qualities, Sydney Rock Oysters are currently at their peak, and will remain this way until March, making now the ideal time to dine on them.


Tips for enjoying Sydney Rocker Oysters in Bondi and beyond this festive season.

Complementary oyster pairings


Freshly shucked is always best in our book. A generous squeeze of lemon and a little classic mignonette—which features minced spring onion, cracked pepper and vinegar—will allow the oysters' flavour profile to truly shine.


If you’re looking to create something extra special for yourself or your guests, Champagne mignonette is a must. Here you’ll replace the vinegar with Champagne vinegar, and add a dash of Champagne.


Serve with a glass of either Pommery Brut Royal NV or Pommery Grand Cru Royal, and you’re all set!

To mark our favourite time of the year, Rocker's menu currently features a dozen shucked to order oysters, accompanied by carefully curated beverages—from sparkling and Champagne, to Prosecco and rosé.


Join us all day on Thursdays, sandy feet and all, to enjoy these luxurious, oh-so-perfect delights.
